August is among us which usually gets people thinking about back to school and fall football. However, farmers markets and produce are still in abundance so here are a few of my favorite summer foods to keep on your radar.
Cherries
Summer screams cherries! These delectable super fruits are not only delicious, but provide many health benefits as well. Cherries are my favorite fruit for taste and nutrition. Cherries contain many antioxidants and valuable nutrients that make them a powerful super food. Whether you are fighting pain and inflammation, trying to regulate those sleeps patterns, or wanting to give your brain a little boost, choose this small and flavorful fruit for your next healthy snack!
Watermelon
Watermelon is my favorite summer treat and over the years, more and more varieties have “sprouted” up, actually… over 300 varieties! So you can find your favorite. They are available seeded, seedless, mini, yellow and orange. In fact, “a two-cup serving of watermelon contains excellent levels of vitamins A, B6 and C, and also serves as a valuable source of potassium. At 92% water, watermelon delivers needed fluids and nutrients to the body,” including the antioxidant lycopene.
Zucchini
Zucchini, a versatile summer squash that goes great in eggs, stir-frys, cakes, breads or even as a side. With seven varieties of zucchini it is hard not to find one you like. Zucchini is low in calories, a good source of dietary fiber, have antioxidant properties and are rich in Vitamin A and C. Fun thing is you don’t have to stop at just the zucchini, you can even eat zucchini blossoms.
Cauliflower
Cauliflower is having a moment. This familiar vegetable is a chameleon among vegetables – it’s turning up as the secret calorie-cutting ingredient in everything from pizza crust to mashed potatoes to standing in for rice in stir-fries. This versatility is especially valuable for diabetics or for those seeking weight loss. Not only is cauliflower low in calories and carbohydrate, it’s packed with good things like fiber, vitamins and natural antioxidants, some of which color this vegetable with beautiful, vibrant hues. Look for traditional white to green, orange and deep purple and try some of these delicious springtime recipes featuring one of nature’s super foods.
